A great base wash for a clean neutral spirit. The ingredients might be simple, but the complexity of a "neutral" base wash takes TLC, technique and execution. We start with fresh Idaho water and slowly add our local confectionaries finest, but the best way to remove funky "sugar bowl" flavors and the smell of gym socks from the wash is to boil each batch until the complex sugars are broken down and begin to caramelize. The long simmer inverts the sugar molecules making it easy for yeast to consume. End with the perfect pH to ensure those stress free yeasties have the best fermentation. The beginning gravity will come in between 1.09 and 1.1 which is a potential 12% to 13% alcohol by volume. Each order comes in a 6 gallon bucket with pour spout lid and 4 gallons of wash with a packet of PPDY (Paul's Perfect Distillers Yeast) and bubbler. The kit should get you from 1.1 to 0 within 10 days.
